Shelf Life, Storage And How Herbal Potency Fades

The classical texts assign different keeping periods to different preparation types and give instructions on storage vessels and conditions. The underlying chemistry explains most of what they recorded.
The traditional keeping periods
Powders are given the shortest usable life, decoctions shorter still, while medicated oils, ghee preparations and fermented liquids are described as keeping far longer.
Fermented preparations and some mineral products are said to improve with age, which reverses the usual direction and is treated as a distinct property.
Storage instructions specify vessels of glass, glazed earthenware or particular metals, kept away from heat, damp and sunlight, and tightly closed.
Why powders fade fastest
Grinding vastly increases surface area, which accelerates oxidation of the constituents most exposed to air and speeds the escape of volatile aromatic compounds.
Aroma loss is the most noticeable sign, and a powder that no longer smells of the plant has almost certainly lost part of what it contained.
Powders also absorb atmospheric moisture readily, and once moisture content rises they support mould and bacterial growth, which is a safety issue rather than a potency one.
Why fats and ferments keep
Oil and ghee exclude water, and without water most microbial growth cannot proceed, which is why fat-based preparations survive far longer than aqueous ones.
Fats do go rancid through oxidation, and rancidity has a distinctive smell that the texts recognise, treating a rancid oil as unfit for use.
Fermented preparations combine alcohol, acidity and sugar, three preservative mechanisms at once, which accounts for the long keeping periods assigned to them.
What the storage instructions were protecting against
Light drives photodegradation of pigments and some active constituents, which is the reason for dark vessels and shaded storage in both traditional and modern practice.
Heat accelerates every degradation reaction, and warm storage can reduce a preparation's usable life substantially without any visible change.
Metal reactivity was also understood, which is why particular metals are specified for particular preparations and others explicitly avoided.
What this means for a buyer
Expiry dates on commercial herbal products reflect regulatory requirement more than measured potency, since stability data for whole-plant preparations is rarely published.
Bulk purchases of powders are false economy, because the material will lose aroma and probably activity long before a large quantity is used.
Any preparation that smells rancid, sour where it should not be, or shows clumping or visible mould should be discarded rather than reasoned about.
