Pulses, Lentils And The Wind Problem
The texts call most pulses drying and wind-forming and prescribe specific corrections; food science identifies oligosaccharides fermented in the colon and largely agrees on the fixes.

Ayurvedic dietetics treats pulses with unusual caution, describing most of them as drying and productive of wind. The corrections the texts prescribe line up closely with what food science recommends.
The classical assessment
Most pulses are classed as astringent, dry and light, qualities that in the framework aggravate vata and are held to produce distension and gas.
Mung is the exception, described as the most easily digested and prescribed during illness and recovery when other pulses are avoided altogether.
The heavier pulses — black gram, chickpea, kidney bean — are hedged with conditions about preparation, quantity and who should eat them at all.
What actually causes the gas
Pulses contain oligosaccharides such as raffinose and stachyose, which human enzymes cannot break down, so they pass intact to the colon and are fermented by gut bacteria.
That fermentation produces hydrogen, carbon dioxide and sometimes methane, and the volume of gas is what people experience as bloating and distension.
Resistant starch and fibre contribute as well, and individual response varies widely depending on the composition of a person's gut bacteria.
The traditional corrections have a basis
The texts prescribe soaking, discarding the soaking water, thorough cooking, dehulling, and cooking with ghee or oil and with spices such as asafoetida, cumin and ginger.
Soaking and discarding the water removes a meaningful portion of the soluble oligosaccharides, and dehulling and long cooking reduce the residue further.
Asafoetida in particular has a long reputation for reducing wind, and while the trial evidence is limited, the practice is old, widespread and low-risk.
Adaptation matters more than avoidance
Regular pulse consumption shifts the gut bacterial population over weeks, and reported symptoms tend to decline in people who continue eating them rather than stopping.
This is why populations eating pulses daily report far less difficulty than occasional eaters, and it argues for gradual increase rather than exclusion.
People with irritable bowel syndrome are a genuine exception, since these carbohydrates are among those restricted in structured elimination diets supervised by a dietitian.
What the pulses supply
Pulses are the main protein source in much of India, and they also deliver fibre, iron, folate and a slowly digested carbohydrate load.
Combining them with grains covers the amino acid profile more completely, which is the nutritional logic behind the standard rice-and-dal or roti-and-dal meal.
The classical caution is therefore about preparation and quantity, not about avoidance, and the tradition treats the well-made pulse dish as a staple rather than a risk.
