Jaggery, Honey And The Sweeteners The Texts Distinguish
Ayurvedic dietetics separates sweeteners by processing stage and assigns each different properties, a distinction that nutrition largely flattens since sugar is sugar once absorbed.

Ayurvedic dietetics treats sweeteners as a graded family rather than a single ingredient, assigning distinct properties to each stage of sugarcane processing. The distinctions are elaborate and nutrition mostly flattens them.
The gradations the texts describe
Fresh cane juice, jaggery, partially refined sugars and fully refined sugar are described separately, with properties shifting as processing advances.
Jaggery is generally treated as heavier and warming, useful in the cold season and after exertion, while refined sugar is described as cooling and lighter.
Honey stands apart from all of these, classed as drying and scraping rather than building, which is why it is the one sweetener the texts describe as reducing.
What processing actually removes
Jaggery retains molasses, and with it small quantities of iron, potassium and other minerals along with the compounds that give it colour and flavour.
Those quantities are genuinely small relative to daily requirements, and obtaining a meaningful amount of iron from jaggery would mean eating an unreasonable amount of sugar.
The claim that jaggery is a mineral source is therefore true in principle and misleading in practice, which is the pattern with most unrefined sweeteners.
Metabolically the differences are minor
Jaggery, refined sugar and honey are all predominantly sucrose, glucose and fructose, and the body handles them in much the same way once they are absorbed.
Glycaemic responses differ somewhat, since honey's higher fructose fraction produces a smaller immediate glucose rise, but the differences are small compared with quantity consumed.
Anyone managing blood glucose should treat all of them as sugar and take dietary direction from a clinician rather than from a traditional classification.
The honey instructions
The texts are specific that honey should not be heated, not combined with equal quantities of ghee, and not taken by anyone with certain conditions.
Heating honey does degrade some enzymes and aroma compounds and increases hydroxymethylfurfural, though the health significance of that at culinary levels is not established.
The one modern instruction that is unambiguous is that honey must not be given to infants under a year, because of the risk of infant botulism.
How the distinctions function
Within the tradition, the sweetener gradations let a practitioner choose a vehicle whose properties suit the intended direction of a formula.
That is a coherent internal logic, and it explains why classical preparations specify a particular sweetener rather than treating them as interchangeable.
Read as nutritional guidance rather than as formulation logic, however, the gradations promise more than the chemistry can deliver.
